一支好的红酒，等待的不是出得起价钱的那个人，就像一个人，他「她」等的那个个人，必是懂得相互欣赏和珍惜。红酒以年份来定优劣，但并不是说年份越久就越好。哪一年的葡萄收成好，那一年才有可能酿出好酒来。一九八二年是好年份，所以该年的美酒便比一九七二年的值钱。看人如看酒，是以年份论，而不是以年资论。就像男人，并不是越老越精贵。一九八二年的男人，或许就比一九七二年的有味。 -

遇到「年份酒」是老天所赐，遇不到也不能怨天尤人，因为可能数年内才有幸遇到一个好的葡萄「年份」。世间凡事都讲个自然舒泰，就像你与他「她」，于千万人中邂逅，没有早一步，也没有晚一步，刚巧赶上了。 -

   有好年份并不代表就能酿出好的「年份酒」，酒品如人品，不是以年份论，而是以品质论。收成虽好，没有掌握好酿造技艺，到头也会好运尽失。就如人生，在对的时候遇到对的人，若没好好珍惜，也得黯然收场。 -

   红酒大都标上年份，人也会，比如男人，在他际遇最坏的时候出现的女人，他会永远感激；而你若在他际遇最坏的时候离开，他会记恨一辈子。 -

葡萄的采摘季节、生长环境、当年的阳光气温的差异，以及酿造方式的不同，决定了每一支红酒都有迥然不同颜色和风味，仿佛生命的独一无二，难以复制。 -

      一支红酒宛如一个生命，来这个世界不由得自己，遇到怎样的气候、温度、季节，甚至遭遇怎样的酿酒师都身不由己，经历了岁月的磨砺之后，成为怎样的一支红酒，也无力掌控。 -

   红酒的酿制过程很长，采收、去梗、破皮、入发酵槽、浸皮踩皮、酒精发酵、压榨、入培养槽、乳酸发酵、培养陈年、澄清与安定、装瓶——历经岁月磨砺，方才成为一杯香醇的陈酿。如同一个人的成熟，过程漫长而艰辛。 -

从平凡生涩，到醇和香甜，从入口浅淡无奇，到回味悠长丰厚，红酒经历了漫长一生，其需要的气力，不亚于人生一场。每一滴红酒都有她的来历，所以品尝好酒，也需用心，一如对待生命。 -

      闻弦歌而知雅意，人类寻觅知己的过程很是寂寞。而一支红酒，由青涩到成熟、在漫长岁月中等待一位懂得品己的贤人，也何尝不是一种寂寞。 -

      再美的人，也会红颜老去，芳华尽失，再好的酒，也有散尽风流失尽颜色的一天。所以，遇到怎样的一支红酒，不论她的身价昂与廉，都请爱惜她，在她最芬芳的时刻好好品尝。如果那是一瓶好酒，定会知足叹息：我最好的岁月都给了你！-
